Baked Potato Soup

It is sooooo darn cold here in Ontario right now!  Believe it or not, we usually enjoy warmer temperatures than this and I can often wear my flip flops right til the end of the month.  But not this year!  Gah!  It’s so cold that I’ve been thinking of comfort foods already and this baked potato soup is a family favorite.  Thought I’d share the recipe with y’all.

Baked Potato Soup


3-5 strips of bacon, diced
1 small chopped sweet onion
1 clove of minced garlic
3 tablespoons of flour
1/2 teaspoon of dried basil
1/2-1 teaspoon of salt to taste
1/2 teaspoon of fresh ground pepper
3 cups of chicken broth/stock
4 large baked potatoes, cut into cubes (I keep the peel on)
1 cup of cream (half and half)
a few dashes of hot pepper sauce to taste

Shredded cheese, crumbled bacon, and chopped green onions/scallions to top with.


Cook bacon til crisp and drain, reserving a small amount of drippings.  Set bacon aside.  Saute onion in the drippings until tender and add garlic.  Stir in flour, salt, pepper, and basil and gradually add the chicken stock.  Bring to a boil for a few minutes, stirring.  Add the potatoes, cream and a dash of hot sauce.  Heat through but do not bring to a boil.  Garnish with toppings. 

Serves 4.  I usually double the recipe because my kids go crazy for it.  Enjoy.
