Every year I make a ton of Christmas cookies. Then I proceed to eat most of them. Way before Christmas. And then I have to make them all over again. And then I have to re-join Weight Watchers in January. Which I hate. So this year I thought I’d be clever and make the cookies that I don’t really care for first. For me that would be gingerbread (sacrilegious, I know) and lemon. I don’t love lemon so I figured for sure these would be safe. These are soooo simple that I actually mixed and baked them while both babies were awake. Bubba watched from his new favorite perch (Charming’s high chair) and Charming just did his thing.
So I thought anything this easy is worth sharing and am passing this recipe on for y’all to try….
EASY LEMON COOKIE RECIPE
|Lemon cookies. Safe. Because I don’t like lemon.|
1 box of lemon cake mix
1/3 cup vegetable oil
1 cup powdered (confectioners) sugar
3 tablespoons milk
1/4 teaspoon lemon extract
Preheat oven to 350 degrees and line cookie trays with parchment (for easy clean up).
Mix the cookie ingredients together in a large bowl and place by rounded teaspoon onto the baking sheet.
Bake for maximum of 8 minutes. Keep a close eye on them and remove from the oven when the edges are golden.
Allow cookies to cool and then mix the frosting ingredients and drizzle on top.
Remember the part where I said I don’t really like lemon? I was so wrong. I loooooove these cookies. I seem to have fallen into the cookie tin and inhaled half of them. They are so good!

Gosh, there goes another one! Good thing they’re so easy to make since it looks like I’ll be making another batch for the rest of my family and friends. Charming likes them too….he ate at least three last night from the cookie plate set out for our company. Hope you like these as much as I apparently do.
