This article will amuse my friends and family because I’m not what you would consider a healthy eater or a vegetable lover. My diet can best be described as a stoned college kid turned loose in the 7-11. I really am working on it though. Most of the time. Sometimes.
Seeing how it’s hotter than a billy goat in a pepper patch around here however, means even I’ve jumped on the summer salad wagon. You know. The kind that isn’t just a side dish but could be an entire meal. Because no one wants an over-heated kitchen in the dog days of summer.
Some of these dishes are already entire meals and others could easily be made into a meal with the addition of some grilled chicken or fish, or even a crusty loaf of bread.

Another goodie from My Recipes is this Corn Chicken and Bell Pepper Salad. This one’s on the menu this week with the jalapeños on the side. Because kids are fun like that.
