I’m totally addicted to cake mix cool whip cookies and I make them all the time. So I don’t know why these didn’t immediately come to mind when I started thinking about pulling together 10 dozen cookies for our Christmas Cookie Exchange party. Maybe I was trying too hard or something because these are ridiculously easy.

I ran a batch through ahead of time in the interest of eating cookies for lunch and making sure they were actually as tasty and festive in real life as they were in my head. Oh. My. Stars. Someone get me some insulin! These are the bomb!!

Easy Cake Mix Cool Whip Christmas Cookies

Ingredients

  • 1 box white cake mix
  • 1 8 ounce tub of cool whip
  • 1 egg, slightly beaten
  • 1/2 cup of crushed candy canes
  • 3-4 drops of peppermint extract
  • Powdered sugar for rolling

Instructions

  1. Preheat oven to 350 degrees and line cookie sheets with parchment paper.
  2. Stir the peppermint extract into the cool whip.
  3. Mix the egg, candy cane chips, cake mix, and cool whip together in a large bowl.
  4. Using a teaspoon, drop spoonfuls of dough into powdered sugar and roll into a ball.
  5. Place on cookie sheets, leaving space between as they spread.
  6. Bake at 350 for 12-15 minutes or until lightly browned on the edges.
  7. Allow cookies to cool completely before packaging.
  8. Makes 36-40 cookies
